I recently went to a restaurant for lunch and ordered the Heirloom Beet Salad With Grilled Chicken, I liked the beets, the grilled chicken, the salad dressing and everything else except for the bitter greens. So, I became interested in looking for a recipe to repricate this salad with the greens I love. Then I found this basic recipe for beet salad. I just have to add grilled chicken. While this recipe suggests arugula, I'll substitute other non-bitter green.
